I prefer a stall who is serving food to please their customers instead of earning every single bit from a customer. That's the heart of a hawker stall.

It is still charcoal roasted goodness. Flavourful and oozing with juice (and fat) the way I like my char siew especially when it is lightly caramelised at the end.
