The thinly shaved pieces of meat, seafood, and vegetables all have to be fresh as can be, or else the dinner will be compromised. For me, the element that ties all the others together is the broth. All the ingredients are dipped and cooked in it, making it central to the experience. Additionally, anything placed in the middle of the table is normally the most important. Again, it all comes down to experimenting with flavours. This again Xiao Lao Wang nailed it.
