Their chicken is always cooked just right, retainining its juices. The secret to such perfections is by cooking the claypot with firery charcoals under AND above the claypots! Madam Heun has been in this business for 21 years and she says that eventhough her children are now all grown up and have asked her to retire, she is still in it for the pleasure and joy of seeing people enjoy her food.
