When one orders the duck, a helper would then take the already cooked duck and "bathed" it with extremely hot oil in a wok. This gives the roast duck its crispy skin which is the signature preparation of the roast duck here.

So far it stays on the top of our list for roast duck. Feel free to drop us suggestions if you know of any delicious duck rice because we'd love to explore!
